Nowadays, salt is an inexpensive and easily accessible product. We can hardly imagine that it was so valuable in the Middle Ages. People needed a lot of salt to preserve meat, fish, and vegetables for a longer period. 

One of the methods to obtain salt was by extracting it from peat. To the ash of burned peat, water or seawater was added. The salt then dissolved in the water. Silt and sand particles sank to the bottom, while unburned peat remnants remained floating on the water. These residues were carefully skimmed off.
